Ingredients

  • 2 Pita Breads
  • 300g Boneless Chicken Thighs
  • 1/2 cup Plain Yogurt
  • 1 tbsp Lemon Juice
  • 1 tsp Lemon Zest
  • 1 tsp Paprika
  • 1 tsp Onion Powder
  • 1/2 tsp Ginger Powder
  • 1 tsp Garlic Powder
  • 1 tsp Italian Herbs
  • 1/4 tsp Chili Flakes
  • Salt & Pepper (to taste)
  • Toppings: Tzatziki, Pickled Onions, Sliced Tomatoes

Instructions

The Marinade

In a bowl, combine paprika, lemon juice, zest, onion powder, ginger powder, garlic powder, Italian herbs, chili flakes, yogurt, salt, and pepper. Mix well.

Coat & Rest

Add the chicken thighs to the marinade and massage until well coated. Let it rest for at least 30 minutes to let the flavors penetrate.

Sear the Chicken

Heat a pan over medium heat with a little butter or olive oil. Cook the chicken thoroughly until browned and cooked through. Remove and slice into strips.

Assemble

Warm the pita breads. Spread tzatziki sauce generously. Layer on the sliced chicken, pickled onions, and tomatoes. Wrap tight and enjoy.
