Chicken Gyro

  1. In a bowl, combine paprika, lemon juice, lemon zest, onion powder, ginger powder, garlic powder, Italian herbs, chili flakes, yogurt, salt, and pepper.
  2. Add the chicken thighs to the marinade and massage until well coated. Let it rest for at least 30 minutes (or longer for more flavor).
  3. Heat a pan over medium heat and add a little butter or olive oil. Cook the marinated chicken thoroughly until it's cooked through and slightly browned.
  4. Remove the chicken from the pan and let it cool slightly. Then, slice the chicken into long, thin strips.
  5. Warm the pita breads. Spread tzatziki sauce on each pita.
  6. Add the sliced chicken to the pita bread. Top with pickled onions and sliced tomatoes. Add more tzatziki sauce if desired.
  7. Wrap and enjoy immediately.
